This E-mail address (until sending this email) is publicly visible only on the metrics site of the torproject and I am getting already a good amount of spam. Maybe a protection like some of the suggestions https://www.ionos.com/digitalguide/e-mail/e-mail-security/protecting-your-em... would maybe reduce the amount?

Maybe. You could obfuscate your contact details in your torrc file already. A lot of relay operators are trying/doing that already.
