I dont know if you can run an ipv6 only node, but you can configure tor to also run on ipv6 alongside ipv4 i put the following in my torrc
ORPort [youripv6adress]:9001
this seems to work for me.

port 9001 is open but "conection refused" if i try IPV6 portscan
I try open 22 only for test trough IPV6 portscan .. ist OK . port opened
